4 boneless skinless chicken breasts
1 medium size can mushrooms
1 whole onion
1 fresh jalapeno, seeded
8 oz pepper jack cheese
4 oz sharp cheddar cheese
1 tbsp butter or margarine
Marinate chicken breasts in Worcestershire sauce, soy sauce and your own preferred seasonings for about 10 minutes. Grill chicken breasts until done and tender. While chicken is grilling, dice the jalapeno and onion.
Sautee mushrooms, jalapeno and onions in the butter or margarine over medium heat until tender. Remove from heat and set to the side. Shred the pepper jack and sharp cheddar cheese together onto a plate.
Place grilled chicken in single layer into a deep microwavable bowl or plate. Take the sauteed vegetables and pour evenly over the chicken. Spread the cheese over the top of the vegetables until covered.
Microwave on high for 2 to 3 minutes until cheese is melted. Let cool about 5 minutes before serving.
