Peanut Butter and Jelly Cake
1/2 cup Butter, softened
1/4 cup creamy Peanut Butter
1 1/3 cups Sugar
2 Eggs
2 cups Flour
1 Tablespoon Baking Powder
1 teaspoon Salt
1 cup Milk
1 teaspoon Vanilla Extract
3/4 cup Grape Jelly
Peanut Butter Frosting
chopped unsalted Peanuts (optional)Cream butter and peanut butter; gradually add sugar, beating until light and fluffy. Add eggs one at a time beating well after each addition. Combine flour, baking powder and salt; add to cream mixture alternately with milk, beginning and ending with flour mixture.
Mix well after each addition. Stir in vanilla.
Pour batter into 2 greased and floured 9 inch round cake pans. Bake at 350 degrees for 30 to 35 minutes or until wooden pick inserted in center comes out clean.Cool in pan 10 minutes; remove cake from pans and let cool completely.
Peanut Butter Frosting
2 1/2 Tablespoons Butter, softened
1/4 cup plus 2 Tablespoons creamy Peanut Butter
1 1/4 teaspoons Vanilla Extract
2 cups Powdered Sugar
3 to 4 Tablespoons MilkCream butter and peanut butter until light and fluffy. Add vanilla; mix well. Add sugar to creamed mixture alternately with milk, beating until spreading consistency.
Spread jelly between cake layers; Spread frosting on top and sides of cake. Garnish cake with chopped peanuts, if desired.
