great dinner salad to use up leftovers or to cook from scratch… Turkey Pasta Salad 1 grilled Turkey Tenderloin, 1 grilled chicken breast, or whatever leftover turkey or chicken is on hand 1 cup penne pasta 1 red bell pepper, chopped 1 cup chopped mushrooms 3/4 cup ranch salad dressing Cut grilled turkey or chicken into 1/2″ chunks. Cook pasta as directed on package and drain well. Combine all ingredients in large bowl and toss gently to combine.
Refrigerate for 2-4 hours or serve immediately. 2 servings
