This one is a big hit in our home!!!!! Hope you enjoy as much as we do:tongue:
Ingredients:
1 pound lima beans
1 ham hock bone
1/4 cup olive oil
2 small cloves garlic (chopped fine)
1/2 can tomato paste
1 cup elbow macaroni
Salt and pepper to tastePreparation
Soak beans overnight. Place beans and ham hock bone in 3 1/2 quarts of cold water. Cover and cook for 1 1/2 hours.In a frying pan saute garlic in oil. Stir and add tomato paste. Simmer for 10 minutes stirring occasionally.
Remove garlic and discard. Add sauce to beans with a dash of salt and pepper. Add more water if soup is to thick.
Remove ham hock and simmer for 2 hours until beans are cooked. Add macaroni and cook 10-12 minutes.

I think I’m not getting something. How do you discard the garlic if it has been chopped fine? Am I reading something wrong?
