Pan-Fried Catfish Topped With Creole Mayonnaise
4 catfish fillets
oil for frying
2 eggs
1 tsp salt
1 cup cornmeal
1/2 cup flour
1 tsp cajun seasoning
4 sub sandwich buns
4 tbs mayonnaise
2 tsp Dijon mustard
1/2 tsp lemon juice
4 lettuce leaves
4 slices tomato
6 tsp pickle relish
Heat oil over medium heat in a deep pan. In a large bowl, whisk the eggs. Pour flour in a separate bowl. In another bowl, combine cornmeal, cajun seasoning, and salt. Dip the fish fillets in the flour mixture, followed by the whisked eggs, and lastly coat them in the cornmeal mixture. Fry the fillets in the pan until cooked through (roughly 4-5 minutes). While the fish is cooking, mix the mayonnaise, mustard, lemon juice, and relish. Remove fish from the pan, and dab with paper towels to remove excess oil. Spread mayo mixture on the bun, and layer fish fillet, tomatoes, and lettuce.
