ParticipantWhile this is not the cheapest menu around it can be affordable for two for a special occasion…
Oysters Rockefeller
1 dozen oysters on the half shell
1 tbs minced green onion
1 clove garlic, minced
1 tbs parsley
2 tbs butter, melted
salt and pepper to taste
2 tbs chopped fresh spinach
2 tbs Pernod or white wine
1/3 cup bread crumbs
Preheat oven to 450°. Carefully remove oysters from shells and drain. Wash shells and put one oyster in each. Place in a baking pan. Mix green onion, garlic, parsley, and 1 tbs butter. Put a bit of mixture on each oyster. Combine spinach and Pernod. Top each oyster with some of mixture. Sprinkle with bread crumbs and dot with remaining 1 tbs butter. Bake for 8 minutes. Serve immediately. Serves 2.

Yum! Oysters are very inexpensive here in South Texas and this is a great way to showcase their wonderful flavor. Even if you have to pay more than I do, this is much less expensive than eating at a restaurant. Thank you!

ParticipantI have a friend that brings them to me fresh and cheap when he goes to his beach house. I never eat out…I can fix the same for a whole lot less! LOL!
