Oven-Fried Cod 4 6-oz cod filets 1/4 cup stone ground cornmeal 1/4 tsp salt 1/4 tsp black pepper 1 avocado, peeled, pitted, and chopped 1/2 cup finely minced red onion 2 tbs lime juice 1/4 tsp salt Heat oven to 400°. Spray a large baking sheet with olive oil. Spread cornmeal on a large plate. Mix in salt and pepper.
Dip fish lightly into the cornmeal. Arrange evenly on the baking sheet. Spray the top of the fish with olive oil then place in the oven to bake 20 min, until it’s cooked through and flakes easily with a fork. Mash avocado, red onion, lime juice and salt together in a bowl.
