This is my all-time favorite way to fry chicken…so to speak
Actually, there is a basic recipe on the Corn Flake Crumbs box, but I’ve added my own twist;-D Those of you that know me can probably guess what my twist is…anybody else care to venture what changes I’ve made?! LOL!
Oven Fried Chicken with Corn Flake Crumbs
6 chicken leg quarters
salt and pepper
1 1/2 cups sour cream, light
2 cups finely crushed corn flakes
1 tsp Cajun or Creole seasoning
1 tsp dried parsley flakes
4 tbs butter, melted
Preheat oven to 350° F. Line a 9 x 13-inch baking dish with nonstick foil or spray with nonstick cooking spray.
Remove excess fat from the chicken legs and remove the skin, if desired. Lightly sprinkle with salt and pepper. Generously coat the chicken legs with the sour cream.
Put crushed cornflake crumbs in a pie plate or shallow wide bowl and add the Cajun or Creole seasoning and parsley.
Dip the coated chicken pieces in the seasoned crumbs.
Place coated chicken in the prepared baking dish.
Drizzle with melted butter and bake for about 1 hour, or until the meat registers 165° on an instant read thermometer. Serves 4 to 6.

kungfujoe94 — I promise, if your family doesn’t have a problem with a ‘little’ kick to the taste buds, they will love this! And just so ya know, Corn Flake Crumbs are my go to favorite ingredient when trying to get that “fried” taste on any meat, except I use the oven.
I’m so pleased that you like my recipes!! Please feel free to adjust any of them to meet your family’s preferences to make them your own…I’ll never tell;-D
