      While this recipe -does- have numerous ingredients, it’s a recipe that’s flexible and hasn’t failed on me yet. Pretty tasty…cooking smiley

      Dirty Rice

      1 tbsp olive oil
      1/2 to 1 pound ground meat (what’s on hand)
      1 large onion-diced
      1 bell pepper-diced (any color-what’s on hand)
      2 stalks of celery-diced
      1/2 cup grated carrots-*optional*
      3 cloves of garlic-minced or grated
      1 1/2 cup long grain rice-NOT minute type rice (can use Basmati, Jasmine, white, brown, etc…)
      1 tbsp beef base-no msg added (can use bouillon-no msg)
      1 tsp paprika
      1/4 tsp red pepper flakes-to taste
      3 cups beef broth (can use water if broth isn’t on hand)
      1 tsp dry dill weed
      1 tsp dry minced parsley
      1-1/2 tablespoon soy sauce
      black pepper-to taste

      1. In a large heavy bottomed skillet or dutch oven, add 1 1/2 tsp oil. Brown gound meat.

      Remove from skillet and rinse to remove fat. Drain fat.
      2. Add remaining olive oil and veggies.

      Saute until almost softened.
      3. Add rice with veggies and saute for 3-4 minutes.
      4. Add all other ingredients.

      Bring to a boil then reduce the heat to low. Cover and simmer for 25-35 minutes or until rice is tender and liquid is absorbed.
      5. Fluff and serve hot.

      note:
      *this dish makes a lot, so make sure to use a large skillet or dutch oven.
      *can substitue the veggies for mixed veggies or others.
      *if desired, can add a can of diced low sodium tomatoes to dish.
      *can serve stuffed peppers with the left over rice dish and mozzerella cheese for planned overs, make quesdillas, burritos, enchiladas, etc… 😉

      Sounds like a really good recipe. I plan to make it next week. I was just looking for something to make with ground beef.

      Thank you for sharing your recipe, it sounds delicious! It would make a great stuffing mix for Bell peppers or roasted squash, I can’t wait to give it a try in next week’s menu plan 🙂

      We just tried dirty rice from a store mix. We LOVED it, but the mix was so unhealthy! I ahve been looking for a healthier version, this sounds great!!

      Leftovers? We are a family of four, and I only got to taste it – and then it was gone! Very tasty!

      Will be making this again, tonight. I love that it doesn’t have that horrible chemical taste that the mix has. Wish I hadn’t waited so long to try it!

      GandKsmom…here’s a hint…make a double batch so you get to have more that a taste! It’s pretty good! LOL!
