Orzo Salad with Shrimp
8-oz orzo
1 cup baby spinach, chopped
1/4 cup chopped sun-dried tomatoes packed in oil
2 tbs olives (green or kalamata), chopped
1/4 cup cubed or crumbled feta cheese
1 tbs olive oil
8-oz peeled and de-veined shrimp
1 tbslemon juice
black pepper to taste
Bring a pot of water to a boil. Add the orzo and cook according to the package directions. Drain and rinse with cold water.
Add the spinach, sun-dried tomatoes, olives, and feta to the cooked orzo.
Set aside.
Heat olive oil in a large skillet over medium high heat and add the shrimp. Cook for about 3 min or until pink and cooked through.
Add the cooked shrimp to the orzo salad and drizzle with fresh lemon juice. Add black pepper to taste.
Serves 4
