This is a great recipe if you are entertaining or going to a potluck cook-out as it can serve about 14 hungry people.
This is my go-to recipe when asked to bring a salad to a cook-out with friends;-D
Orange, Red Onion, and Avocado Salad
2 bags greens
1 red onion, cut into rings
2 avocados, diced
2 oranges, sectioned
1 cup slivered almonds, toasted
1/2 cup oil
1/3 cup red wine vinegar
1 clove garlic, minced
2 tbs green onion, chopped
2 tbs brown sugar
1 tsp soy sauce
1/2-1 tsp curry powder
In a jar, combine the dressing ingredients.
In a salad bowl, combine the onion rings, avocado and orange sections.
When ready to serve, add the greens to the salad bowl. Gently toss with dressing. Top with almonds.
