      2 cups plain flour
      1 tsp baking soda
      1/4 tsp cinnamon
      1 1/4 cups plus 2 Tbs sugar
      1/2 cup chopped mandarin oranges
      1 stick Shedd’s Country Crock spreadable sticks
      2 eggs
      1 Tbs grated orange peel
      1 cup buttermilk
      1/2 cup golden raisins

      Combine flour, soda & cinnamon. Beat butter & 1 1/4 cup sugar until light & fluffy (1 minute). Beat in egg & orange peel. Beat on low, alternating flour mixture & buttermilk just until blended (begin & end with flour). Fold in raisins & oranges. Pour in muffin pan. Sprinkle the 2 Tbs of sugar over muffins in pan. Bake at 350 for 20 minutes or until done.
