Cabbage Sausage Skillet Dinner- a delicious one-pan dish that will feed the entire family (heartily!).
We usually serve this with toasted garlic bread. I like this recipe here for that.
1 stick butter or margarine 1 small head of cabbage, chopped 1 small onion, chopped
1 pound kielbasa (smoked sausage) sliced into 1″ coins
1 (15 ounce) can Fire Roasted Tomatoes or Rotel tomatoes
1 teaspoon salt
3/4 teaspoon freshly ground pepper
Melt butter in large skillet. Add cabbage, onion, and cook on medium high for about 5 minutes stirring to keep from sticking to pan. Add remaining ingredients, cover and simmer for 20 – 25 minutes.
This is a great, cheap, hearty meal for a family that can be stretched even further by adding crusty bread or a salad! I recently made this using chicken-apple sausage that was marked down and cheaper than kielbasa Since I’m currently a single, I don’t need to stretch it that much, but can use the leftovers for lunches;-D
we did this one for dinner the other night, I found a package of hamburger buns in the freezer that had been “forgotten” so we turned them into toasted garlic herb parmesan bread to go with it. Very filling & quite tasty too.
