Old South Pecan Candy Log/Squares
Recipe by: Rita Heikenfeld, Lazarus-Macy’s and Ridge Market
1/4 cup half & half
2 tablespoons butter
1/2 to 1 teaspoon vanilla
2 cups confectioners’ sugar
2 cups pecan halves, toasted and chopped
Extra chopped pecans or melted chocolate (opt)Heat caramels with half & half and butter over low heat until melted. Stir
in sugar and nuts. Pour onto buttered or sprayed waxed paper, plastic wrap
Shape into 16-20″ roll. Chill a few hours before cutting into
Tips from Rita’s kitchen:If you want, dip half of each slice into melted chocolate, or roll entire
log into finely chopped nuts before cutting.
Or drizzle chocolate on top of roll before cutting. Make sure you let
chocolate harden in refrigerator or in a cool place before cutting. Store in
cool dry place, covered.
Makes about 32 slices.Instead of rolling into a log, pat or roll into 1/2″ square. Or pour into
foil lined and sprayed pan (let foil hang over edges of pan). Chill and cut
into squares (if using pan, lift out foil by edges, flip onto cutting board
and peel off foil before cutting) and proceed with decorating as desired.
Don’t like pecans? Any nuts, including soy, will do.
