Okra Medley 16-oz pkg frozen okra, sliced or whole 16-oz pkg frozen corn 4 strips bacon 2 tomatoes, diced 1 onion, chopped 1 tsp sugar 1 tsp salt 1 tsp pepper In a large skillet, cook bacon until crisp. Remove bacon, reserve drippings in skillet. Crumble bacon and set aside. Stir onion, okra, and corn into reserved drippings and cook on medium high heat for 15 min, stirring frequently. Add tomatoes, sugar, salt and pepper to mixture. Blend well. Pour mixture into serving dish and sprinkle with crumbled bacon. Serves 4 Note: This goes well with just about any meat prepared or is a great meal served with biscuits, cornbread, or crusty rolls.
