Oatmeal to Go
1/2 cup honey
1 cup vanilla yogurt
2 egg whites
2 tsp vanilla
2 tsp baking soda
1 tsp cinnamon
6 cup rolled oats
Pre-heat the oven to 325.
Grind about 3 cups of the oats to yield 1 1/2 cups of oat flour. They process well in a mini-chopper.
Mix all wet ingredients and fold in dry. Spread into a greased 9×13 pan.
Bake at 325 for about 30 minutes, or until golden.
Cut into 12 squares.
Stores best when wrapped well in plastic and stored in the freezer. A quick zap in the microwave or round in the toaster oven makes it a quick meal when rushing out the door in the morning.
Note — Dried fruit can be added if desired.
