      Oat Waffles
      4 large eggs
      2 cups low-fat cottage cheese
      2 tbs ground flaxseed
      1/4 cup water
      2 cups rolled oats
      1/2 tsp vanilla or almond extract
      Place all ingredients in a blender and blend until evenly mixed and smooth.
      Heat a waffle iron.
      Lightly coat with oil or spray with non-stick spray. Place a heaping 1/2 cup full of batter onto the waffle iron and cook 4-5 min until golden brown and crisp.
      Repeat with remaining batter. Makes 4 waffles
