Mix apple slices with cinnamon and lemon juice in a small microwave-safe bowl. Heat in the microwave, covered, for 45 sec.
Slice each piece of bread in half and spread about half a tbs of almond butter on each half.
Arrange the apple slices on top of the almond butter, then top with the other bread half.
Crack the eggs into the same bowl the apples were in and beat them. Dip the four sandwiches in, letting them sit and soak the egg mixture for about two min.
Spray a non-stick pan with olive oil spray and arrange the sandwiches in it over medium heat. Let them cook, covered, about 4 to 5 min on each side, until the egg sets. Serves 2
