Not Your Average Cheesecake 1 lb small curd cottage cheese 2, 8-oz. cream cheese 4 eggs, slightly beaten 1/3 cup cornstarch 1 1/2 cup sugar 1/2 cup melted margarine or butter 2 tbs lemon juice 1 tsp vanilla 1 pt sour cream Pre-heat oven to 325 degrees. Dust pan with graham cracker crumbs. Cream cottage cheese and cream cheese until blended. Beating at high speed blend sugar then eggs. Reduce to low then add corn starch, lemon juice, vanilla, beat until blended. Add melted butter or margarine and sour cream, blend. Pour into pan and bake at 325 degrees for 70 minutes. At end of baking time, turn oven off and let sit in oven for 2 hours. Do NOT open door to peek!
