No-Cream Strawberry Custard
This sweet custard dessert made with fresh strawberries is creamy without the cream.
7 tablespoons arrowroot powder
2 cups apple-strawberry juice
1/4 cup maple syrup
2 tablespoons tahini (sesame butter)
2 teaspoons vanilla
2 cups sliced fresh strawberriesIn food processor or blender, process arrowroot, juice, maple syrup, tahini and vanilla. Pour into medium saucepan and cook over medium heat, whisking constantly, 20 minutes or until thick.
Line 4 (1/2-cup) custard cups with sliced strawberries, reserving any extra for garnish.
Pour custard into cups and chill overnight to firm.
Serve cold.
Makes 4 servings.
Per serving: 246 calories; 5 g fat (0 g saturated fat; 18 percent calories from fat); 47 g carbohydrates; 0 mg cholesterol; 7 mg sodium; 3 g protein; 3 g fiber.
