      If you can’t stomach eating 8 lbs of potatoes at once, you can

      freeze them IF you parcook them first.

      If you freeze them uncooked, they will turn black.

      To par cook, boil a large pot of water. I recommend scrubbing the

      outsides and either slicing or cubing the potatoes. You can cook

      them with or without the skins. Place the potatoes in the boiling

      water. Boil for about 5 minutes. Drain, let cool, and then freeze in

      whatever amount you want in freezer ziploc bags.

      You can then use them for soups, casseroles, hash browns, etc.
