New Orleans Style Spicy Beans And Rice
1 lb white beans
1 tbs canola oil
1 lb andouille sausage
1 chopped onion
1/2 chopped bell pepper
1 stalk chopped celery
3 cloves minced garlic
1 tsp Cajun seasoning
salt and pepper to taste
2 cups cooked rice
Place beans in crockpot and cover with enough water that the level is at least two inches above the beans. Cook on low for 10 hours (start at night before going to bed). Next morning, brown the sausage in a skillet, drain, then put into your slow cooker.
Add in the oil, onion, bell pepper, celery, garlic, and seasoning. Season with salt and pepper. Cover and cook on low for 8 hours, adding the rice in half way through.
Stir to mix all ingredients well.
