Here are a few more I found (but have tried)
Verde Rice recipe1 pound Monterey jack cheese
1 pint sour cream
2 (3 ounce) cans chopped green chiles3 cups cooked brown rice
1/4 pound Cheddar cheese
Combine first 4 ingredients. Top with Cheddar cheese. Bake at 350degrees F for 30 minutes in buttered 8-inch square pan.
You can try chopped jalapeño peppers for “spicy” taste.
Creamy Rice Pilaf recipe2 beef bouillon cubes
2 1/4 cups boiling water
1 cup regular long grain rice1 cup carrot slices
2 tablespoons scallion slices
1 tablespoon margarine1/2 teaspoon dillweed
8 ounces cream cheese, cubed
2 tablespoons mayonnaiseDissolve bouillon in water in saucepan; add rice, vegetables,
margarine and dill weed. Cover; simmer 20 minutes or until water is
absorbed and rice is tender. Remove from heat. Add cream cheese andmayonnaise; stir until cream cheese is melted.
