I have 2 – one for breakfast and one for dinner.
Breakfast Ricebrown (or white) rice
milk1 apple chopped
nutmegMix to your liking. This is wonderful when the rice is piping hot
and softens the apple.
Chicken & Rice Casserole1 1/2 cups diced cooked chikcent
1 cup cooked rice
1/2 cup chopped celery1/4 cup mayonnaise
1 T lemon juice
2 hard-cooked eggs, chopped1 (10 3/4 oz) can cream of mushroop soup, undiluted
1/4 cup soft bread crumbs
1 T butter, margarine or butter substituteCombine first 8 ingredients; stir well. Spoon mixture into a shallow
2-quart casserole coated with cooking spray. Combine bread crumbs
with butter and sprinkle over top of casserole. Bake at 350uncovered for 40-45 minutes or until bubbly.
A variation is to substitute sour cream for the may and parmasean
cheese for the bread crumbs (this is what I do and I omit the eggs)~Julie
