How about meatballs? They freeze beautifully, and
they’re very versatile – you can serve them over pasta
or rice or mashed potatoes, with or without sauce or gravy,
on sandwiches, in soups, by themselves – almost infinite
variations.
Here’s the recipe I use – I usually double or triple
it. Flash freeze the meatballs and then put them
in freezer containers (I use Aldi’s brand of freezer
bags) in the portion sizes you use.
2 lbs. ground beef
2 eggs
1/2 c. crumbs of choice (cracker, bread, oatmeal, etc.)
1 large onion, finely chopped (optional)
salt & pepper to your family’s taste
Combine all ingredients in a large bowl; mix well – I
use my hands to combine, and my kids have always loved being
in charge of this step
Roll into 1 1/2 – 2″
balls.Place meatballs about 1″ apart in a shallow baking pan; bake
at 400 degrees for about 15 minutes or until done.
