      EARLY, SMALL GREEN APPLES THICKEN BEST.

      YEILD: 1 QT PECTIN FROM 1 LB APPLES.

      1. WASH & CORE APPLES. CUT IN THIN SLICES.

      2. ADD 1 PINT OF WATER PER POUND OF APPLES & BOIL SLOWLY IN A COVERED POT
      FOR 15 MIN.

      3. STRAIN FREE FLOWING JUICE THROUGH LIGHT MUSLIN OR CHEESECLOTH.

      4. RETURN PULP TO THE POT & ADD THE SAME AMOUNT OF WATER. COOK SLOWLY FOR

      ANOTHER 15 MIN. STRAIN OUT ALL JUICE THROUGH A CLOTH AGAIN, THIS TIME
      SQUEEZING

      THE PULP DRY.

      5. COMBINE THE 2 JUICES & USE IMMEDIATELY ~~ OR ~~ BRING TO A FULL BOIL &
      POUR INTO

      STERILIZED JARS & SEAL LIKE JAM FOR LATER USE.

      USE ONE CUP OF THIS PECTIN TO 6 CUPS OF PREPARED FRUIT IN YOUR JAM &
      JELLY RECIPES.
