      Fresh Tomato Sauce With Garlic and Herbs

      This uncooked sauce demands vine-ripened tomatoes with deep, rich flavor and color. The taste of the tomatoes, garlic and herbs intensifies when tossed with hot pasta or spooned over sizzling grilled beef.

      3 pounds fresh, ripe tomatoes, peeled, seeded and diced
      2 tablespoons garlic, finely minced
      1/3 cup extra virgin olive oil
      1/4 cup chopped fresh basil or 1 tablespoon minced fresh oregano
      2 tablespoons minced fresh parsley
      1/2 teaspoon hot red pepper flakes
      Freshly ground black pepper, to taste
      1 tablespoon balsamic vinegar
      1 teaspoon coarse salt

      Combine all ingredients except the salt in a large nonaluminum bowl. Stir to blend well, then let sit at room temperature for 30 minutes.
      Just before serving, add salt.
      Makes slightly over 2 cups or 4 servings.
      Per serving: 250 calories; 19 g fat (2.6 g saturated fat; 68 percent calories from fat); 20.3 g carbohydrates; 0 mg cholesterol; 383 mg sodium; 3.6 g protein; 4.2 g fiber.
