Dried Tomato Basil Pesto
? cup dried tomatoes, crumbled
2-3 cloves minced garlic
1 tbsp. extra virgin olive oil
1 tbsp.
dried basil
? cup water
Saut? garlic in olive oil — do not brown! Turn down heat, add dried
tomatoes and basil, stir to coat.
Immediately add water and stir. Cover and
steam 2-3 minutes until tomatoes are plumped. Serve with pasta.
Keeps well
in refrigerator. (Note: Omit basil for Dried Tomato Pesto.)
