I’ve tried different recipes but this is my favorite.
1 1/2 cups self-rising flour
1 1/4 cups all-purpose flour
1 cup butter
2 cups sugar
1 cup milk
1 tsp. vanilla
Make sure you start with butter that is softened and cream it until it’s smooth. Beat in the sugar. Add eggs, I usually do two at a time and beat well after each addition. Add the self-rising flour and blend. Add the milk and vanilla and blend. Add the all-purpose flour and blend.
Bake about 20 minutes in a 350 degree oven.
I usually just do the quick and easy icing, one box confectioner’s sugar, one stick of butter, 1 tsp. vanilla and a little milk. (1/3 cup of cocoa if you want chocolate icing)
