1 hydrated lb of tvp
1 Tbsp oil
1 green pepper
jalopeno’s to taste (i use jarred)
1 onion (or less to taste)
2 cups salsa
8 tortilla wraps
1 can enchilada sauce (i like the canned stuff best)
1 lb of cheese (we like alot of cheese)
In a large sauce pan heat oil, add chopped onion and peppers, saute
till just tender, pour in the salsa, add the tvp, cook on med. heat
until thoroughly heated.
Spray baking pan with nonstick spray, take a totilla wrap and spoon
the salsa mix on it, fold over and place in the pan. Do this until
pan is full.
Pour the can of enchilada sauce over them and sprinkle
with cheese. Bake in oven at 350 for 20 minutes.
