      Mushroom Stir-Fry
      1 pkg Shitake mushrooms, cleaned and sliced
      1 pkg baby corn, cleaned
      4 tbs oyster sauce, or vegetarian oyster sauce
      3 tbs virgin coconut oil
      salt
      pepper
      Place a non-stick frying pan over medium-high heat. Add virgin coconut oil and baby corn to the pan with 4 tbs water. Simmer ingredients together.

      Add mushrooms to the pan, and cook until mushrooms are soft, about 5 minutes. Stir in oyster sauce and continue to cook. Add salt and pepper to taste.

      Remove from heat and serve over rice. Serves 2.
