      Muffin Mix
      5 cups flour
      1 cup whole wheat flour
      1-1/2 cups sugar
      1 cup instant nonfat dry milk powder
      1/4 cup baking powder
      2 teaspoons salt
      1 tablespoons cinnamon
      1/2 teaspoon ground cloves
      Mix in large bowl and store in air tight container.

      To bake muffins, place 2 cups mix in a large bowl. Add 2/3 cup water, 1 slightly beaten egg and 1/4 cup oil and mix only until dry ingredients are moistened. Fill 12 paper lined muffin cups 1/2 full. Bake at 400 degrees for 10-15 minutes until muffins are puffed and firm. You could put a bit of jam on the top of the batter before baking. Or stir in 1/3 cup golden raisins when you add the egg, water, and oil. For savory muffins, stir in 1/2 cup grated sharp cheddar cheese, or saute 1/2 cup finely chopped onion in 1 tablespoons olive oil until tender, and add that along with the egg, water, and oil. If you’re making savory muffins, be sure that you cut down on the sugar and left the spices out of the muffin mix.
      This can be the basis for a variety of muffin types and makes a great gift because it is so versatile!
