6-8 boneless skinless chicken breasts or thighs
2 tbsp seasoning blend:
3 tbsp paprika, 3 tbsp garlic powder, 3 tbsp course ground black pepper, 3 tbsp cajun seasoning
3 tbsp butter
2 tbsp olive oil
2 medium onions, sliced
1/4 cup Worcestershire sauce
1/2 cup low sodium chicken broth
1/4 cup Miracle Whip
1/4 cup Dijon mustard
2 small cans sliced mushrooms
1 cup shredded mozzarella cheese
Total prep and cook time is 40 minutes. Season chicken with seasoning blend and let stand for 10 minutes while preparing the grill for medium heat. Saute onions in olive oil and butter until soft. Add mushrooms and simmer until almost all of the liquid has been absorbed, about 10 minutes. Add Worcestershire sauce and chicken broth and reduce until almost all of liquid is absorbed, about another 10 minutes and set aside. Combine Miracle Whip and mustard. Grill chicken 8-10 minutes on each side. When you turn the chicken, baste with mustard mixture on that side and let cook for 5 more minutes. For the last 3-5 minutes, top chicken with mushroom mixture and cheese. Cheese will melt.
