Mexican Cheese and Bean Dip
1 lb American cheese, cut into 1/2-inch cubes
2 cups leftover black beans
1.5 cups leftover corn
1 diced, each, red and green bell pepper
1 cup thick and chunky salsa
Combine ingredients in microwaveable bowl.
Microwave on high 5 min or until cheese is completely melted and mixture is well blended, stirring after 3 min. Serves 36 dippers
