      Friends of mine just returned from a vacation ‘tour’ that included western NC, parts of TN and KY. While in TN they sampled some of the best BBQ they’d ever had. Upon requesting the recipe at a neighborhood diner and being sold a bottle of — Memphis Barbeque Sauce, they returned home to ask me if I could make out the ingredients. Here is what I came up with, a recipe (based on other bbq preparations) and if there’s anyone here from Memphis to either back me up or tell me where I went wronggiggle smiley
      Memphis Barbeque Sauce
      1 cup apple cider vinegar
      1 cup ketchup
      1/2 cup water
      1/4 cup finely chopped onion
      2 tbs minced garlic
      2 tbs butter
      2 tbs molasses
      2 tbs prepared mustard
      2 tbs brown sugar
      1 tbs Worcestershire sauce
      1 tbs paprika
      1 tbs mild chili powder
      2 tsp dried oregano
      2 tsp dried thyme
      1 tsp salt
      1 tsp black pepper
      Melt butter in a saucepan over a medium heat. Add onion and garlic and saute until lightly browned. Add remaining ingredients (vinegar last), reduce heat and simmer over low for 20 minutes. Allow to cool. Optionally you can puree this sauce to make a smoother barbecue sauce.
