2 cups uncooked bow tie pasta
1 lb raw medium shrimp-peeled, deveined, and tails removed
4 oz feta cheese-crumbled
3 cups fresh spinach-rinsed, stems removed and torn into pieces
1 med red bell pepper-diced (I used green)
1/2 med onion-diced
1 tsp dried basil
1/2 tsp salt
1 can (2-2.5 oz) sliced black olives OR 1/3 cup sliced Kalamata olives-(I used black)
2 tbsp evoo1. Heat oven to 350. Spray 13 x 9 in glass baking dish with cooking spray.
2.In large saucepan or dutch oven, cook pasta as directed on pkg. Add shrimp during last 3 minutes of cook time. Cook until pasta is tender and shrimp is pink.
Drain; return to saucepan.
3. Stir 1/2 cup cheese and remaining ingredients except oil into cooked pasta and shrimp. Pour into baking dish; spread evenly.
4.Bake 15 minutes or until hot. Sprinkle with oil; toss. Top with remaining cheese.
4-5 servings.
