Mediterranean Oven Roasted Salmon
¼ tsp salt
¼ tsp black pepper
4 skinless salmon fillets
2 cups cherry tomatoes, halved
½ cup finely chopped zucchini
2 tbs capers, undrained
1 tbs olive oil
1 can sliced ripe olives, drained
Preheat oven to 425 degrees. Sprinkle salt and pepper over both sides of salmon filets. Place fish in a baking dish lightly coated with cooking spray or oil. Combine tomatoes and remaining ingredients in a bowl. Spoon mixture over fish. Bake for 20-25 minutes or until salmon is cooked through. Serves 8
