Mediterranean Chicken and Rice Salad
3 tbs red wine vinegar
1-1/2 tbs olive oil
1/4 tsp black pepper
1 clove garlic, crushed
3 cups cooked rice
1-1/2 cups cooked chicken, diced
1/2 cup bottled roasted red bell peppers, drained and diced
1/4 cup large pitted olives, drained and halved
1/4 cup fresh chives, chopped
1/4 cup fresh basil, chopped
1/4 cup fresh oregano, chopped
14 oz artichoke hearts, drained and quartered
Combine vinegar, olive oil, pepper and minced garlic in a small bowl. Set dressing aside. Combine rice and remaining ingredients in a large bowl and add dressing, stir until well blended. 4 servings = about 405 calories.
