Mediterraen Pasta Salad ½ C olive oil 2 tbs fresh lemon juice salt and pepper 6 cups chicken broth 1 cup fresh basil, chopped 1 cup fresh parsley, chopped 1 lb of orzo 2 cup grape tomatoes 1 cup chopped onions 1 cup olives fresh feta Begin by cooking the orzo in a large pot of chicken broth. Bring to a boil and add salt for seasoning. Once the orzo is cooked, drain and run it under some cold water.
In a separate bowl, mix the olive oil, lemon juice, and a dash of salt and pepper together. In another bowl, the basil, parsley, tomatoes, onions, olives, and feta cheese can be tossed together. Slowly add the orzo to this bowl and finish by mixing in the olive oil mixture.
