This is a wee bit different from my other recipe, hence the title…
Meatball Casserole II
Meatballs:
2 lb extra-lean ground beef
6-oz pkg stuffing mix for chicken
1 onion, finely chopped
1 cup water
2 eggs
Heat oven to 400º.
Spray 2 rimmed baking sheets with cooking spray.
Mix ingredients just until blended. Shape into 48 (1-1/2-inch) meatballs. Place on prepared baking sheets.
Bake 12 min or until done — 160º.
Casserole:
48 meatballs
2 11-oz cans refrigerated thin crust pizza dough
14-oz jar pizza sauce
1/2 cup chopped green peppers
1-1/2 cups mozzarella cheese, shredded
1/4 cup parmesan cheese grated
Unroll 1 pizza crust. Press lightly onto bottom of 13×9-inch pan sprayed with cooking spray.
Spread with half the pizza sauce. Top with meatballs, arranging in 4 rows of 6 meatballs each. Cover with remaining sauce.
Top with peppers, shredded cheese and Parmesan.
Unroll remaining pizza dough. Place over meatballs. Pierce with large fork at 2-1/2-in intervals to allow steam to escape.
Bake 20 min at 400° or until golden brown.
