To make all this I usually make 2 meatloaves, one for the dinner and one for the other recipes and some for my husband to take to work.I seem to make my meatloaf different everytime depending what’s onhand, but here’s my basic recipe:
Meatoaf2 lbs ground turkey or beef
1 cup dry oats
2 eggs, beaten
1/4 cup diced onion
1/2 can tomato soup (reserve other half for topping)
1/4 green pepper, chopped
any additional seasonings you like (season-all, mrs. dash, old bay, garlic salt, etc.)
mix and bake in loaf pan at 350 for 1/2 hour. Top w/ remaining tomato soup and bake an additional 1/2 hour.
(serves a couple of hungry kids)
Prepare 2 cans of tomato soup. Cut up about 2 cups worth of meatloaf and add to the heated soup. Top with shredded cheddar cheese.Meatloaf sandwiches…self explanatory.
