Marinated Turkey Breast
In a container large enough to hold a turkey breast mix together 1 tsp chili powder, 1 tsp ground cumin, 1 tsp salt, 1 tsp pepper, 3 tbs lemon juice, 3 tbs lime juice, 2 tbs oil, and 1/4 cup dry sherry or wine. Place turkey breast in container, shake to coat, and place in refrigerator overnight. Flip container a couple of times as you think about it;-) When ready to cook, place turkey breast and marinade in crockpot and cook on low 6-7 hours or 3-4 hours on high.
Reserve two cups cubed or shredded for the next recipe.
Turkey Skillet Dinner
2 tbs oil
1 onion, coarsely chopped
1 clove garlic, minced
4 potatoes, sliced in rounds
16 oz can diced tomates with juice or two fresh tomatoes, chopped
1 cup water (2 if using fresh tomatoes)
2 cups turkey, cubed or shredded
salt and pepper to taste
In a large skillet, heat oil and add onion and garlic. Saute until onion is translucent. Add potatoes and cook over medium heat, stirring occasionally, for 15 minutes.
Pour canned tomatoes into skillet, stir to mix and add turkey, water, and seasonings. You don’t really need any other seasoning because the turkey was marinated and has LOADS of flavor! Continue cooking until everything is thoroughly heated and fluid is reduced, about 15 minutes.
You can thicken with corn starch or flour and water mixture if desired, but it really isn’t necessary. Serve it up!
