Marinated Broccoli Ring 2/3 cup oil 1/3 cup tarragon vinegar 1 tsp salt 1/2 tsp mustard 1/4 tsp pepper 1 tbs sugar 2 tbs grated Parmesan cheese 1-1/2 lb fresh broccoli, cut into stalks 1/2 lb fresh mushrooms, sliced 2 tomatoes, sliced escarole Mix first 7 ingredients in a jar. Shake well. Cook broccoli in a small amount of seasoned water for 9 minutes.
Drain. Place broccoli in a large shallow dish. Drizzle 1/2 cup dressing over top.
Chill for 24 hours. Line a serving platter with escarole. Layer broccoli and sliced tomatoes.
Pile mushrooms in center. Drizzle remaining dressing over tomatoes and mushrooms. Serves 5-6.
