Lubia Polo – Rice with green beans – Persian dish (serves 4)
2 c rice 1/2 cooked (Persians use 1/2 c uncooked per person)
1 lb lean ground beef
1 med onion minced
1/4 tsp turmeric
1 small can tomato sauce
1 -15 oz can cut green beans
salt to taste
olive oil (to coat the pan to sautee the onions)
Heat the olive oil and add onions. Cook till onions are translucent add beef and break apart to become very small pieces. Cook till well browned add the turmeric, green beans (use liquid too) and tomato sauce.
Bring to a boil and boil till 75 % of the liquid is gone. Pour into a bowl and add rice 1/2 cup at a time until it’s not able to take any more. You want it to be red in color but not soupy.
If any rice is left put in the bottom of a pan and add a couple tblsp of olive oil. Pour the rice mixture on it and cover with a cap. Let steam till rice is fully cooked.
This has always been a big hit with everyone I have made it for. It is easy to multiply up and if you use lean meat it doesn’t have as much oil that you would have to drain off.
