Low-Fat Lemon-Garlic Chicken
4 chicken breasts, boneless
1 cup plain low fat yogurt
juice of 1 lemon
2 tsp paprika
2 cloves minced garlic
pepper
Combine yogurt, lemon juice, paprika and garlic. Place chicken breasts between two sheets of waxed paper or plastic wrap. Pound with a mallet or rolling pin to a 1/4-inch thickness.
Place flattened chicken breasts in a glass baking dish or in a resealable plastic bag. Add lemon garlic marinade. Cover and marinate in the refrigerator for 4-6 hours. Preheat broiler. Place marinated chicken breasts on a broiler rack coated with nonstick cooking spray. Sprinkle with pepper. Broil for 12-15 minutes, turning once, making sure the chicken reaches an internal temperature of 165 degrees Fahrenheit. Option: You can grill the chicken breasts instead. 4 servings = 225 calories.
