Many people on low-carb diets turn to low carb chicken recipes for delicious meals. Using canned green chiles and shredded cheese for enhanced flavor, this creamy chicken skillet dish is ready in just 20 minutes, from prep to finish.
It’s also one of those dishes you can still serve your family who may not be following the low carb diet you’re on. Simply add their favorite side dish as well. It goes great with potato sald.
Since this dish has mild chilies, it’s not too spicy, but it’s delicious nevertheless. You may serve the chicken with a salad, and thin slices of avocado on top.
You can spice up the dish by adding a dash of red pepper flakes or a couple shakes of sriracha sauce.
Low-Carb Creamy Southwest Chicken
1 tbs olive oil
2 boneless, skinless chicken breasts
salt and pepper to taste
1/4 cup finely minced onion
2 cloves minced garlic
4.5-oz can diced green chilies
1/4 cup heavy cream
1/4 cup shredded cheddar cheese
Optional garnish: avocado slices or cilantro.
Heat large skillet with oil over medium heat.
Chicken should be cut into pieces that are bite-sized and seasoned with salt and pepper. Cook until brown on both sides, adding onions halfway through.
Add the minced garlic, cooking for another min.
Add a tiny bit of water to de-glaze the pan, then add the green chilies and cream.
Continue to simmer until chicken is cooked through and the sauce has thickened.
Top with shredded cheddar or jack cheese, and serve when cheese melts.
For a Keto friendly Serving: Serve over steamed chopped broccoli or cauliflower
