      I would recommend visiting allrecipes.com and clicking “vegetarian”

      and “entree” in their search.

      However, my quick suggestion is to buy a few bags of dried beans. It

      involves a little planning because you should at least quick-soak them

      if not an all-night soak before you cook them. But I’m a veg, and

      adding lentils or black beans to almost anything makes for a filling,

      yummy meal.

      I’ve made a lentil, cheese, potato bake which is super good. It’s

      basically twice-baked potatoes. I usually add celery to get a little

      crunch.

      Or stir-fry a can (or fresh-equivalent) of diced tomatoes with bell

      pepper, onion, corn, black beans, and chili pepper spices. Stir in some

      rice and it’s really tasty and very filling. You could always make

      cornbread or something to go on the side.

      Veggie tostadas – warm (or fry) a tortilla and spread refried beans on

      it. Layer it with lettuce, corn, onions, tomato, grated cheese, and hot

      sauce. I include soy crumbles before my layers, but it’s just as good

      without “meat.”
