Linguine with Shrimp and Tomato Sauce
1/4 cup black olives, chopped
6 oz shrimp
salt, to taste
1/2 lb tomatoes (can use canned)
1/2 cup olive oil
2 tbs lemon juice
2 tsp capers
1 garlic clove, finely chopped
1 tsp basil or parsley
pepper, to taste
1-lb pkg linguine
Bring enough water to cover the shrimp to a boil and add 1/3 tsp salt.
Boil until they turn pink, about 2 minutes, then drain. Do not overcook or they will toughen. When cool enough to handle, dice.
In a serving bowl, combine the shrimp and all ingredients except pasta. Let marinate for up to 30 minutes. Cook pasta as directed.
Drain and toss immediately with the sauce. 4 servings = about 775 calories.
