Linguine and Fava Bean Soup
1 1/2 tbs extra-virgin olive oil
1 onion, very finely chopped
2 oz proscuitto or ham, coarsely chopped
7 cups water
1 lb fresh fava bean, shelled and pale green inner skins removed
1/4 lb linguine, broken into 2 in lengths
2 tsp salt
1 tbs basil
1 tbs mint
1/4 tsp black pepper, or to taste
Warm the oil in large pan. Add the onion and saute until tender, about 3 minutes. Add the prosciutto and saute until lightly browned, about 2 minutes.Pour in the water and bring to a boil. Add the fresh beans and simmer, partially covered, over medium-low heat until tender, about 30 minutes. Stir in the linguine and salt.
Cook over medium heat until just tender, about 10 minutes. Stir the basil and mint into the hot soup just before serving, then season with pepper. Serve immediately.
4 servings = about 300 calories.
