This is an easy to prepare recipe to take on your next camping trip, serve as a side to your next cook-out, take for a potluck of just serve at home to your family;-D The directions are for your camping trip, but I think that you can figure out how to adjust it for how you want to prepare it!
Lima Bean Slaw
16-oz pkg frozen lima beans
6 cups shredded cabbage
1 cup thinly sliced fennel, halved
1 red pepper, chopped
1 zucchini, cut lengthwise in half, then sliced crosswise
3/4 cup zesty Italian dressing1/4 cup thinly sliced fresh basil
Cook beans as directed on package.
Cool.
Combine all remaining ingredients except basil in large container. Add beans. Mix lightly.
Top with basil.
Refrigerate or place in cooler for trip. Serves 12
Makes a great side dish for whatever you serve!
